Enzyme Diamine Oxidase (DAO) is thermolabile and sensitive to acidic pH. Therefore, any galenic formulation containing DAO as an active dietary ingredient requires specific manufacturing with temperature and pH control to achieve maximum DAO activity in the final product and ensure enzymatic stability during storage.
Galenic formulations must be gastro-resistant (not only acid-resistant) to allow the enzyme to retain its activity as it passes through the stomach and to ensure efficient release in the small intestine, where DAO metabolizes ingested histamine.
